Pumpkin Spice Latte Waffles
Recipe from Pinch of Nom · original post · full recipe on pinchofnom.com
Pumpkin Spice Latte Waffles are an easy, high-protein breakfast packed with cosy autumn flavours. Give them a go and tell us what you think!
Ingredients
- porridge oats80 g
- pumpkin purée100 g
- espresso30 ml
- ground cinnamon — ½ tsp1.3 g
- mixed spice — ¼ tsp0.6 g
- granulated sweetener2 tbsp
- eggs2 ea
- fat-free natural yoghurt350 g
Method
- Blitz the oats in a food processor until they're a smooth fine powder consistency.
- Add the blitzed oats, pumpkin purée, coffee, cinnamon, mixed spice, sweetener, eggs, and yoghurt to a bowl. Mix well, until smooth.
- Plug in your waffle maker and once hot, spray it with a little low-calorie cooking spray.
- Pour half of the waffle batter onto the hot plate and spread out. It depends on the size of your waffle maker — for reference, we made 2 large circle waffles with 4 waffle sections in each circle.
- Seal your waffle maker and cook for 5-6 minutes, or until the waffle is crispy and golden brown around the edges. Repeat with the remaining mixture.
- Your waffles can be served alone or with a dollop of yoghurt, fruit, and a drizzle of honey.
