Beef and Broccoli Stir-Fry
Sliced thinly enough, one steak feeds the whole table.

- Broccoli500 g
- Brown onion150 g

Method
- Start the rice so it is ready when the stir-fry is.
- Slice the beef as thinly as you can across the grain and toss it with the grated ginger and half the soy sauce.
- Cut the broccoli into small florets and blanch for 2 minutes in boiling water, then drain well.
- Heat half the oil in a wok over high heat and sear the beef in two batches for 1-2 minutes each, then set aside.
- Add the remaining oil and stir-fry the sliced onion and garlic for 2 minutes, then return the broccoli and beef.
- Add the honey, the remaining soy sauce and a splash of water and toss for 1 minute until everything is glossy. Serve over the rice.

Prawn and Broccoli Stir-Fry
- 500 g Raw peeled prawns instead of Lean beef steak
Sear the prawns in two batches for 1-2 minutes each until just pink, then set aside as for the beef.
Vegetarian
Tofu and Broccoli Stir-Fry
- 440 g Firm tofu instead of Lean beef steak
Press and cube the tofu, toss it with the ginger and soy, and brown it in two batches for 5-6 minutes each instead of the 1-2 minutes for beef.
Vegan
Tofu and Broccoli Stir-Fry
- 440 g Firm tofu instead of Lean beef steak
- 30 ml Maple syrup instead of Honey
Press and cube the tofu, toss it with the ginger and soy, and brown it in two batches for 5-6 minutes each instead of the 1-2 minutes for beef.
Gluten-free
- 80 ml Tamari instead of Soy sauce
